Garlic Chicken with Pasta and Vegetables

This recipe for garlic chicken with pasta and vegetables is simple to do and just delicious.  It is perfect for a busy week night evening when time is scarce.

Ingredients

  • 1 pound of boneless, skinless chicken breasts
  • 1 tbsp extra virgin olive oil
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/2 cup of frozen corn
  • 1 tbsp fresh parsley
  • 1 tsp sugar
  • 2 tbsp white wine
  • 2 cups of broccoli, chopped into small florets
  • 2 carrots, sliced
  • 1/2 c light cream
  • 1/2 cup shredded cheddar cheese
  • Kosher Salt and pepper to taste
  • 8 ounces rotini pasta, cooked

Instructions

  1. Heat the olive oil in a large pan
  2. Add chicken, cook for 5-6 minutes, until it is cooked and starts to brown slightly
  3. Add garlic and onion; cook 2 minutes
  4. Add wine, and sugar - stir quickly, scraping up all of the brown bits
  5. Add broccoli, carrots, and corn. Let cooking, stirring a few times, about 5 minutes.
  6. Move everything to the side of the pan and add the cream; bringing it to a steady simmer.
  7. Mix in the cheese, add the pasta, and toss everything to coat. Season with salt and pepper to taste
