Ingredients
- 1 pound of boneless, skinless chicken breasts
- 1 tbsp extra virgin olive oil
- 1/2 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/2 cup of frozen corn
- 1 tbsp fresh parsley
- 1 tsp sugar
- 2 tbsp white wine
- 2 cups of broccoli, chopped into small florets
- 2 carrots, sliced
- 1/2 c light cream
- 1/2 cup shredded cheddar cheese
- Kosher Salt and pepper to taste
- 8 ounces rotini pasta, cooked
Instructions
- Heat the olive oil in a large pan
- Add chicken, cook for 5-6 minutes, until it is cooked and starts to brown slightly
- Add garlic and onion; cook 2 minutes
- Add wine, and sugar - stir quickly, scraping up all of the brown bits
- Add broccoli, carrots, and corn. Let cooking, stirring a few times, about 5 minutes.
- Move everything to the side of the pan and add the cream; bringing it to a steady simmer.
- Mix in the cheese, add the pasta, and toss everything to coat. Season with salt and pepper to taste
