I love easy chicken meals. It seems that we eat chicken several times a week and I’m always on the lookout for new and interesting ways to prepare it that are fast and easy.
This recipe for chicken with a tomato avocado layer on top and melted cheese is super easy and tastes delicious.
The dish uses very few ingredients and is a two-part recipe. Cook the chicken first on the stove and then place it in the oven to melt the cheese and finish it off.
For extra flavor, I used olive oil infused with sun-dried tomatoes and basil. (affiliate link) It gave the chicken a really yummy flavor.
If you are looking to get heart-healthy fats in your diet, avocados are the way to go, not to mention how tasty they are! According to the American Heart Association, good fats are those that can lower bad cholesterol levels and are beneficial when consumed in moderation.
And with just a slice of avocado on the chicken they do not add many calories, so you can indulge without worrying about breaking the calorie bank.
Tomato Avocado Chicken with Melted Cheese

Ingredients
- 1 tbsp sun dried tomato and basil olive oil
- 1 pound boneless skinless chicken breasts
- 1/2 tsp onion flakes
- 1 1/2 tsp lemon juice
- lemon zest
- 1/2 tsp Kosher salt
- pinch of cracked black cracked black pepper
- 3 slices of avocado
- 3 thick slices of tomato
- 1/2 cup shredded Romano cheese
Instructions
- Pre Heat the oven to 350 degrees
- Heat the olive oil in a medium skillet. Add the chicken to the pan and sprinkle with onion flakes, lemon zest, salt and pepper. Cook for 3-4 minutes on each side, or until the chicken is lightly browned.
- Transfer the chicken to a greased baking dish and top each breast with a slice of avocado, 1 slice of fresh tomato and the shredded cheese. Drizzle with the lemon juice.
- Bake for 10-12 minutes or until the cheese has melted and the chicken is done.
