These turkey-stuffed peppers are a healthy way to enjoy a traditional dish, which normally contains rice.
This recipe is clean eating at its best. They are Paleo, Whole30 compliant, and gluten-free, too!
There is no rice or other high-carb fillings. Drained chopped peppers and wilted spinach combine with the ground turkey to make a flavorful filling that will satisfy the most picky of eaters.

Ingredients for these gluten-free ground turkey stuffed peppers
To make this stuffed pepper recipe, you’ll need the following ingredients:
- 1 tablespoon of olive oil
- 1 pound of ground turkey
- 3 large peppers
- 2 large cloves of garlic
- 3 small peppers (I used tri-color peppers to give the dish lots of color), chopped
- 14 ounces of diced tomatoes, lightly drained
- 3 cups of baby spinach
- 2 tablespoons each of fresh parsley, basil, and oregano
- Sea salt and cracked black pepper to taste
Let’s make some turkey stuffed peppers!
This recipe is very easy to make.
Start by removing the tops of the peppers and cleaning out the seeds and membranes. Preheat the oven to 350ºF (180ºC). 
Fresh herbs add lots of flavor to this recipe. I used basil, oregano, and parsley.

Add olive oil to a non-stick frying pan and brown the ground turkey until it is no longer pink.
Add the chopped small peppers, fresh herbs, spinach, and garlic, and cook until the vegetables are soft and the spinach has wilted.
Stir in the salt and pepper and cook for 2-3 minutes more.

Stir in the drained, diced tomatoes. Cook for a few minutes until everything is well-incorporated.
Spoon the mixture into the cleaned peppers, and place the baking dish in the preheated oven. Cook for 25 minutes.
Time for dinner!
I thought I would miss the cheese that normally comes on top of stuffed peppers, but the filling was so flavorful, I didn’t mind it at all. They are light, tasty, and filling, in spite of the fact that there is no rice in the mixture.
Serve the gluten-free stuffed peppers with roasted vegetables or steamed green beans.

These ground turkey stuffed peppers are a fabulous way to get a good helping of vegetables in your diet in a tasty way. They are gluten-free, Paleo, and Whole30 compliant.
Ingredients

- Add the chopped small peppers and garlic, and cook until the peppers are tender and the garlic is translucent.
- Stir in the spinach and cook until the spinach wilts.
- Add the fresh herbs and cook 2-3 minutes.
- Stir in the drained tomatoes and season with salt and pepper.
- Spoon the mixture into the peppers, and add the tops.
- Cook the stuffed peppers in the preheated oven for 25 minutes.

These are delicious! Thanks for the recipe inspiration! Instead of chopping up 3 of the peppers, I stuffed all 6! Doubled the ground turkey & spinach and added chopped carrots, riced cauliflower and an extra 1/2 can of fire-roasted diced tomatoes to the filling. Will definitely make again!
