- 1 tablespoon of olive oil
- 8 ounces of large white mushrooms, sliced
- Kosher salt, to taste
- 2 cloves of garlic, crushed
- 4 boneless, skinless chicken breasts
- ½ cup of chicken stock
- ½ cup good of good quality red wine, such as Merlot or Pinot Noir
- A dash of cracked black pepper
- 1 teaspoon of cornstarch
Instructions
- Heat the olive oil in a large non-stick skillet over medium heat for five minutes.
- Add the mushrooms and season them lightly with the kosher salt.
- Cook for 2-3 minutes, until the color starts to change.
- Stir in the minced garlic and cook for another 2 minutes.
- Season the chicken on both sides with the kosher salt and cracked black pepper.
