Ingredients for mushrooms with chicken in red wine sauce

To make this recipe, you’ll need the following ingredients:

  • 1 tablespoon of olive oil
  • 8 ounces of large white mushrooms, sliced
  • Kosher salt, to taste
  • 2 cloves of garlic, crushed
  • 1 pound of boneless, skinless chicken breasts
  • ½ cup chicken stock
  • ½ cup good-quality red wine
  • A dash of cracked black pepper
  • 1 teaspoon of cornstarch

You’ll also need a nonstick sauté pan.

Step-by-step: chicken in red wine sauce

Start by heating the olive oil in a large non-stick sauté over medium heat for five minutes.

Add the mushrooms and season them to taste with the kosher salt. Cook for 2-3 minutes, until the color of the mushrooms starts to change.

Stir in the minced garlic and cook for another two minutes.

Cook for 3 minutes on each side until the chicken starts to brown.

Making the red wine sauce for chicken breasts

Add chicken stock and red wine to the skillet. Mix well, cover, and cook for 15 minutes until the chicken is done.

Add one teaspoon of cornstarch to 2 tablespoons of water. Add the cornstarch mixture to the stock, red wine, and mushrooms, and cook until the sauce has thickened.

Ingredients

  • 1 tablespoon of olive oil
  • 8 ounces of large white mushrooms, sliced
  • Kosher salt, to taste
  • 2 cloves of garlic, crushed
  • 4 boneless, skinless chicken breasts
  • ½ cup of chicken stock
  • ½ cup good of good quality red wine, such as Merlot or Pinot Noir
  • A dash of cracked black pepper
  • 1 teaspoon of cornstarch

Instructions

  1. Heat the olive oil in a large non-stick skillet over medium heat for five minutes.
  2. Add the mushrooms and season them lightly with the kosher salt.
  3. Cook for 2-3 minutes, until the color starts to change.
  4. Stir in the minced garlic and cook for another 2 minutes.
  5. Season the chicken on both sides with the kosher salt and cracked black pepper.
  6. Push the mushrooms and garlic to the side of the skillet and add the chicken breasts.
  7. Cook for 3 minutes per side until the chicken starts to brown.
  8. Add the chicken stock and red wine.
  9. Cover and cook for another 15 minutes.
  10. Transfer the chicken breasts to a serving plate and keep them warm.
  11. Mix 1 teaspoon of cornstarch with 2 tablespoons of water in a bowl.
  12. Add the water/cornstarch to the mushroom, stock, and red wine mixture. Cook until the liquid has thickened.
  13. Spoon the red wine sauce and the mushrooms over the chicken breasts.
  14. Serve with pasta or a side salad for a delicious and easy meal.
