Don’t let the fact that it is baked keep you from trying it. The dish is full of flavor and you will not miss the extra oil.

This is one of my go to dishes when I want to make a healthier version of the normal chicken parmesan recipe that is fried and full of fat.  My whole family loves it and it’s so easy to make.

Ingredients

For the marinara sauce

  • 14 oz of stewed tomatoes
  • 1 tsp of garlic salt
  • 2 tbsp of tomato paste
  • 1 tbsp of Italian seasoning

For the cutlets

  • 16 oz Turkey tenderloin
  • 1 large egg - whisked lightly
  • 1 cup of skim milk
  • 1 cup of Panko bread crumbs
  • 1/2 cup of all purpose flour
  • 1 tbsp of Italian seasoning
  • 1 tbsp of Fresh thyme
  • 1 tsp Kosher salt
  • 1 tsp cracked black pepper
  • 2 tbsp of olive oil.
  • 1 cup of Grated Sartori Cheese
  • 1 tbsp fresh parsley

Instructions

  1. In a saucepan, combine the ingredients for the Marinara sauce and cook over medium heat for about 20 minutes.
  2. While this is cooking, prepare the cutlets. Get out 2 bowls and 2 plates. Put skim milk in one bowl and egg in the other. Place flour and seasonings on one plate and the Panko bread crumbs on the other.
  3. Dip the cutlets first into the egg, then into the flour, then into the skim milk and finally roll in the Panko bread crumbs.
  4. Heat the oil in a pan and lightly fry the cutlets until light golden brown, about 5 minutes.
  5. Place a few spoonfuls of the marinara in a baking dish. Top with the cutlets and spoon over the rest of the sauce. Add grated cheese to each cutlet.
  6. Cook in a preheated 375 degree oven for about 30 minutes, until the cheese has melted and the turkey is cooked through.
  7. Garnish with chopped fresh parsley and serve.
