Potato Nachos with Re-fried Beans

These potato nachos substitute sliced potatoes for tortilla chips. The end result is a very savory and tasty dish that can be used as a party starter or a side dish.

I first discovered this recipe years ago and it was described as a form of nachos but without all the chemicals that normally come in nachos.  I’ve tweaked it over the years to make it my own version.

The recipe uses potatoes instead of tortilla chips and is a hearty and nutritious side dish or can be a complete meal for a vegetarian. It really is delicious and my whole family loves it.

The dish is made in much the same way as a scalloped potato dish, with layers of potatoes, onions and, in this cream, a mixture of fat free re-fried beans and salsa.

I use my own homemade taco seasoning for the spices.   And for the layers between the beans, I am very sparing with the cheese, except for the top layer, so as to keep the calories down a bit.

Make your Own Taco Seasoning.Serve with with chicken enchiladas and you will have the whole family clamoring for more.

The dish is so easy.  Just combine 1/2 jar of salsa, and a can of fat free re-fried beans.  Layer potatoes and onions with a tiny bit of cheese, spread the bean mixture and repeat. Top with a generous layer of cheese.

Potato Nachos with refried beans

Use sliced potatoes instead of tortilla chips for a protein rich version of nachos.

Cook Time 40 minutes
Total Time 50 minutes


  • 4 large baking potatoes, peeled and sliced about 1/4" thick
  • 1/2 large onion diced
  • 16 ounces of fat free re-fried beans
  • 8 ounces of salsa.
  • 1 tbsp of taco seasoning (see my link above for home made taco seasoning.)
  • 1 cup of shredded Mexican style cheese


  1. Preheat the oven to 350 º F.
  2. Combine the re-fried beans, salsa and taco seasoning in a bowl.
  3. Place the sliced potatoes in a baking dish and sprinkle 1/3 of the diced onion.
  4. Spread 1/3 of the bean mixture and a very small amount of cheese.
  5. Repeat until you have three layers with the top layer having most of the cheese.
  6. Bake at 350º F for about 30 - 40 minutes until the potatoes are cooked and the cheese is bubbly.
