Making the mango corn salsa recipe
Super easy is the name of the game with this recipe. You’ll need the following ingredients:
- Butter and sesame oil
- Fresh corn kernels (One ear)
- Fresh mango, diced into small cubes (1 small mango)
- Avocado, diced (see how to keep it from going brown here)
- Fresh lime juice
- Cilantro, roughly chopped
Directions
Preheat the oven to 400°F (204°C) while you prepare the corn mango salsa.
Dice the mango, and avocado into bite-sized chunks. Strip the stems from the cilantro and finely chop it.
Heat butter in a nonstick frying pan, add the corn kernels, and stir-fry for 1-2 minutes until they are golden. Place the corn in a mixing bowl.
Add the diced mango, lime juice, sesame oil, and cilantro, tossing to mix thoroughly.
That’s all there is to the salsa!
Baking the salmon
This part of the recipe is also easy. You’ll need these ingredients:
- Salmon (I choose pieces about 3/4 inch thick)
- Olive oil
- Garlic powder
- Kosher salt and cracked black pepper
Instructions
Baking salmon is my preferred way to cook it. It gives even heat distribution around the salmon, ensuring it cooks uniformly. Here is how to do it.
Sprinkle the salmon with garlic powder and season with salt and pepper. Heat the olive oil over medium-high heat in an oven-proof pan.
Add the salmon and sear for 1-2 minutes on each side. Transfer to a preheated oven and bake for 13 minutes.
Place the salmon fillets on a serving plate. Spoon the mango corn salsa over the top of the salmon and serve immediately.
The whole dish is on the plate in about 20 minutes or so!

Salmon with Mango and Corn Salsa
This mango and corn salsa takes just minutes to prepare. It is a great topping for the cooked salmon. The whole meal will be ready in less than 1/2 hour!
Ingredients
- 16 ounces of salmon (I chose thick pieces)
- 1 tablespoon of olive oil
- 1/2 teaspoon of garlic powder
- Pinch of kosher salt
- Dash of freshly ground black pepper to taste
For the Salsa
- 1/2 tablespoon butter
- 1 teaspoon of sesame oil
- 1 cup fresh corn kernels (One ear)
- 1 cup fresh mango, diced into small cubes (1 small mango)
- 1/2 avocado, diced
- 1 tablespoon of fresh lime juice
- 1/4 cup cilantro, roughly chopped
Instructions
- Preheat the oven to 400 degrees F.
- In a non-stick frying pan, melt the butter on medium heat. Add the corn kernels and stir-fry for about 1 to 2 minutes until lightly golden.
- Place the corn into a mixing bowl.
- Add the diced mango, lime juice, sesame oil, and cilantro, tossing to mix thoroughly.
- Set aside the mango salsa while you prepare the salmon.
- In a skillet, heat the olive oil over a medium-high heat.
- Carefully add the salmon skin side down. Sprinkle the garlic powder evenly over the salmon. Season the salmon with salt and pepper.
- Cook for approximately 1-2 minutes on each side.
- Place the salmon in the preheated oven and cook for 13 minutes.
- Place the salmon fillets on a serving plate.
- Spoon the mango corn salsa over the top of the salmon and serve immediately.
