Paleo Beef Avocado Blueberry Salad with Maple Mustard Dressing

Anyone new to a Paleo diet may start thinking they will get tired of salads, since they can be a staple of the food regime.  But This Paleo beef avocado blueberry salad is anything but ordinary, and is so delicious, you will find that it keeps sneaking into your lunch time pattern.

This salad came together for me courtesy of the kind people at Steve’s Paleo Goods.   (affiliate link) The company makes a wonderful product line of really delicious Paleo products and I used two of them today to come up with the recipe for this salad:  their fabulous (and I mean it when I describe it this way) Maple Mustard salad dressing,  and also their Dried wild blueberries.

Paleo Beef Avocado Blueberry Salad with maple Mustard dressing.Of course you can’t have a salad with just wild blueberries and a great tasting salad dressing so I starting thinking what would go well with these two flavors and came up with a recipe that is pretty darn good, even if I do say so myself.

Paleo Beef Avocado Blueberry Salad with maple Mustard dressing.The walnuts add a lovely crunch to the salad and compliment the texture of the wild blueberries very well.  Avocado, and tomatoes, plus pineapple and roast beef slices go just beautifully with the maple mustard dressing.  I could seriously drink that stuff by the bucket full.

The salad is clean and chock full of healthy ingredients but also quite filling.  Perfect for a quick lunch time meal and fancy enough to share with the friends you want to impress the most! Best of all, Paleo and gluten free! (be sure to check your walnut package. I used hand picked walnuts from a friend’s tree for this recipe.)

Serves: 1
Ingredients
  • 1 cup of baby spinach leaves
  • ½ avocado
  • 2 tbsp of dried wild blueberries
  • ¼ cup of pineapple chunks
  • 3 slices of good quality sirloin roast beef slices
  • 2 tbsp of walnut halves
  • 6 grape tomatoes cut in half
  • 1 tbsp of Maple mustard dressing
Instructions
  1. Arrange your spinach leaves on a plate. Layer over the salad ingredients and top with the maple mustard dressing and toss.
  2. Enjoy!
