Printable Recipe: Open Face Hot Turkey Sandwich with Cranberries & Stuffing
With Thanksgiving and Christmas usually comes left over turkey and lots of it. I have a variety of recipes to use it up. I actually love left overs and buy a turkey much larger than I need so that I can make the taste last for days. (see my turkey hash recipe here!) This hot turkey sandwich with cranberries and stuffing is a favorite in my house.
The recipe is simple to do and uses ingredients left over from the holiday meal, or use stove top stuffing, packaged gravy and buy more cranberries to go with the turkey. The real deal left overs are best but store bought is fine too.
Cut the crusty bread into fairly thick slices and set aside.
Next heat the gravy until it is bubbling. Whisk to remove any lumps.
While the gravy is warming, I heat the stuffing in the microwave and got it nice and hot.
Cut the turkey into large pieces and also some smaller diced pieces. I used both white and dark meat.
Add the smaller diced turkey to the gravy and cook until well heated.
Now warm the cranberry sauce in the microwave.
Now you start to layer. First the hot stuffing.
Now comes the whole cranberry sauce layer.
Place the large pieces of turkey on next. They do not need heating. The next layer will heat them enough.
Pour the hot gravy and turkey mix over the top. Serve with a side salad for a delicious “left over” meal that is anything but second choice.
If you are really hungry, you can also serve with some of my left over cheesy scalloped potatoes. They are great with these hot turkey sandwiches.
