This grilled top round steak recipe uses a fresh lime marinade that adds bright flavor while helping the meat stay moist on the grill. The result is a simple dinner recipe that feels special without requiring expensive cuts of beef.
Top round steak doesn’t always get much attention at the meat counter, but it can make a surprisingly flavorful grilled steak when cooked correctly. Since this cut is leaner than many traditional grilling steaks, a good marinade and careful grilling help keep it tender and juicy.
If you’ve wondered whether top round steak is good for grilling, how long to grill it, or the best way to cook it without drying it out, this recipe walks you through the process step by step.

How to make this grilled top round steak recipe

Top round steak is a lean cut of meat, but it can still be grilled as long as you take some steps to make it more tender.
Marinating the steaks allows the lime to tenderize what is normally a tougher cut of meat. I like to marinade the steak overnight so that mealtime is quicker the next day.
Making the marinade
The lime marinade adds a sweet and tangy Caribbean flavor to the steak.
- Combine the lime juice, sugar, olive oil, Worcestershire sauce, and garlic in a small bowl.
- Mix well to combine.
Marinate the top round steak in the fridge
- Place the top round steak in a casserole dish.
- Pour the lime mixture over it.
- Place the dish in the fridge to marinate for 6 hours or overnight.
- Turn the steak occasionally.
How to grill the steak
- Remove the top round steak from the marinade.
- Heat the grill to medium-high heat.
- Grill, covered, 10 to 11 minutes for medium-rare, turning halfway through.
Rest the steak
- Let the steak rest for 5-10 minutes to allow the juices in the meat to redistribute.
- Slice the steak thinly, across the grain, and serve.
