Chicken and Broccoli Pasta

This recipe for Chicken and Broccoli pasta has a wonderful taste and is loaded with heart healthy broccoli which also makes it very filling.

I have recently discovered the delights of using Knorr side dishes to make delicious, and fast dinner entree recipes.   They taste great and I can alter the ingredients to slim them down to suit my New Year’s desire to get more healthy.

I lightened it up by using skim milk and low fat sour cream, and I baked the bacon to reduce the fat by a huge amount.

Start by baking the bacon in the oven on a rack. Remove, and place on paper towels (although baking it means almost no grease.)

baked baconPlace the chicken breasts in a non stick pan and cook about 5 minutes on each side until cooked through and slightly browned.  Set aside and keep warm.

cooked chickenAdd a package of Knorr Pasta Sides – Chicken and Broccoli flavor to the frying pan and add 1 1/2 cups of water and 1/2 cup of skim milk. 

Knorr pasta sidesBring to a boil and then reduce the heat to medium and continue cooking for  minutes.

thickened pasta sauceStir in the broccoli florets and cook another 2 minutes.

add broccoli to panStir in the low fat sour cream, combine well,  and continue cooking for about 2 more minutes.

add the sour creamReturn the chicken to the pan, coat with the sauce and cook another minute.

return the chicken to the panServe by placing the pasta and broccoli on a plate. It is done in about 30 minutes, including baking the bacon in the oven.  Serve with a tossed salad and enjoy!

Chicken and Broccoli Pasta

Knorr pasta sides turns ordinary chicken breasts into a creamy and delicious pasta dish.

Ingredients

  • 1 pkg Knorr Pasta sides - Chicken and Broccoli
  • 2 slices of bacon
  • 16 ounces of chicken breasts, boneless and skinless
  • 2 cups of broccoli florets
  • 1 1/2 cup of water
  • 1/2 cup of skim milk
  • 1 spring onion, diced
  • 1/4 cup of fat free sour cream

Instructions

  1. Start by baking the bacon in the oven on a rack. Remove, and place on paper towels.
  2. Place the chicken breasts in a non stick pan and cook about 5 minutes on each side until cooked through and slightly browned. Set aside and keep warm.
  3. Add a package of Knorr Pasta Sides - Chicken and Broccoli flavor to the frying pan and add 1 1/2 cups of water and 1/2 cup of skim milk.

  5. Stir in the broccoli florets and cook another 2 minutes.
  6. Stir in the low fat sour cream, combine well, and continue cooking for about 2 more minutes.
  7. Return the chicken to the pan, coat with the sauce and cook another minute.
  8. Serve by placing the pasta and broccoli on a plate. Top with the chicken and garnish with crumbled bacon and spring onions.
  9. Serve with a tossed salad and enjoy!
