Whoopsie…I’m trying to follow a Paleo diet.  So what am I to do?

Celebrate Nutella Day by Making these Paleo Nutella Cranberry Baked Apples.

For those of you who do not know, a Paleo diet is based on the types of foods presumed to have been eaten by our early human ancestors.  It consists mainly of meat, fish, vegetables, and fruit, and excludes dairy or grain products and processed food as well as processed sugar.

It is similar but not exactly the same as a gluten free diet.

One of my favorite nut butter flavors is chocolate and hazelnut.  I decided this recipe is perfect for Nutella Day (or Cranberry Relish Day), and I set about figuring out how to use it in a variety of recipes.

Fruit and nut butters go beautifully together, and chocolate goes with anything in my book. So it was a no brainer to come up with this recipe for baked apples…one of my favorite healthy dessert ideas.

The ingredients are a delightful mix of healthy items.  Dried cranberries, pure maple syrup, Nut Butter, and some diced almonds.Ingredients for my Paleo Nutella Cranberry Baked Apples

I started by coring the apples with a melon baller and sprinkling them with some fresh lemon juice to keep them from going brown.

The nut butter, and the rest of the ingredients combing to make a decadent and delicious stuffing for the cavity that I just made. A sprinkling of more chopped almonds and they are ready to bake.preparing the Paleo Nutella Cranberry Baked Apples
Into a preheated 350º F oven for 30 minutes until the apples are tender but not too soft.  An extra drizzle of pure maple syrup gives an extra bit of sweetness to the paleo nutella cranberry baked apples.

Doesn’t that just make you want to dig right in?  Crunchy almonds, tangy diced cranberries and the delicious chocolate nut taste of the nut butter makes this a very special dessert that won’t break the calorie bank.
