This Cookies and Cream Frozen Coconut Rum Cocktail is sort of a cross between a pina colada and a spiked rum dessert. The cookies and cream ice cream gives it a decadent touch and smokey color. It is the perfect drink to share with friends when you have them over for cocktail recipes.
Time for a Cookies and Cream Frozen Coconut Rum Cocktail
The drink has just a few ingredients: Coconut rum, Frangelico, and, of course, some Cookies and Cream Ice cream. Is it a drink, or is it dessert? You decide. For me, it’s both!
- 1 ounce coconut rum
- ½ ounce Frangelico
- 3 tablespoons cookies and cream ice cream
- 1 cup ice
- coconut flakes and maraschino cherry, optional for garnish
- In a blender combine all of the ingredients and puree until smooth.
- Pour and sprinkle coconut on top and garnish with a cherry, if desired. Serve immediately.
